Description: Step one of cassava processing is peeling and washing. Here, peeled cassava roots will be washed. They are usually covered with soil and dirt before peeling. Peeling is done manually. Because of the irregular size and shape of the roots, it is impossible from smallscale processors to mechanize this process efficiently and without wasting an unacceptably large part of the root. Once they've been peeled, they are washed thoroughly (twice) to remove stains, sand and dirt. The cassava processing facility is supplied with a source of clean water for this purpose..
