Description: Jean Hidalgo Soto, 32, who lives in the district of Juanjuí, is the father of two young children and is one of the youngest workers at the agricultural cooperative ACOPAGRO. Since 2015, he has been working in the laboratory and is in charge of the physical and sensory analysis of each of the bean batches that will become the final chocolate products to be commercialized. Jean enjoys the whole process that the beans go through in the laboratory, but he admits that he likes the tempering phase the most, as he can choose whether to do it manually or semi-automatically. “I like to do it manually because it takes me longer with the machine,” says Jean.

The most important part of his job is sampling each batch to guarantee the result that customers demand. If he makes any mistake, the sample will not conform to its nature. For example, if he exceeds the roasting time, the sample will taste burnt and, on the contrary, if the roasting time is too short, the sample will taste raw. “For me, it is a great satisfaction to carry out the physical and sensory analysis from the first moment to the end, when I see that the sample meets the parameters we have set here at the cooperative, which in turn improves our sales.”

The AGRIdigitalization project is an IFAD initiative aimed at strengthening farmers’ organizations. It had a business intervention model which included training services, webpage updating, documents and videos translation, and positioning of products on digital platforms outside of traditional commerce. The purpose was to develop and strengthen a support model for organizations to access new markets through e-commerce.
