Chef Carlo Cracco grinding dried sumac berries at The restaurant Beit Al-Asilat. Sumac is an old fruity and tangy oriental spice. It grows as berries on shrubs. After harvest, the spice is dried and is then ground to separate it from its seeds and create a powder, the form in which it is most commonly used, as seen on the picture.
