Title: Colombia - Puentes/Rural for Young People – November 2023
Description: Leidys Odor prepares “Arroz silvestre” (wild rice), a dish with typical flavors from the Magdalena such as ñame (yam), “queso costeño” (a cheese from Colombia’s Caribbean coast), coconut, iraca (toquilla palm), and cacao.

Leidys Odor, former student of the “Magdalena’s regional cuisine” course offered by the “Anfitriones para la Paz” (Hosts for Peace) initiative, has always been interested in recovering and promoting the flavours from her region. “I was interested because it was a course rescuing Magdalena’s food, something lost so many years ago”, she says. The recipe for this dish can be found in the cookbook “¡A qué sabe Santa Marta!” (“Santa Marta’s taste”), made by the “Anfitriones para la Paz” initiative in an effort to preserve and give value to the traditional dishes of the Sierra Nevada de Santa Marta.

The “Anfitriones para la Paz” initiative is part of the “Puentes/Rural for Young People” project, developed by ICCO Cooperation with IFAD’s financial and technical support. With its technical training, this initiative aims to provide young adults in rural areas of Colombia the tools to rescue and revalue local products and services, through the lenses of food and tourism.

This is the case of Leidys, and it is also the case of Johny Serrano, 22-year-old entrepreneur and former student of the “Touristic experiences and circuits design” course. Along with his partner, Johny created the tourist route “Cacao de la Sierra” (Cacao from the Sierra), which offers an experience around cacao plantations. Now, their business articulates farming, gastronomy, and tourism.
