Before returning to Tunisia to open his own pizzeria in the Siliana governorate, Tahar (54) lived in Italy for 30 years, where he learnt the Italian art of pizza-making. He proudly says that the pizza he makes is 100% real Italian pizza. "I use a tomato sauce made with fresh tomatoes, quality olive oil, thyme and good mozzarella”, he points out. Tahar is one of the loyal customers of a new cheese factory run by two young associates, Sana and Dalel. With the aim of setting up their own business, the young women applied for support from Siliana Territorial Development Value Chain Promotion Project (PROFITS), an IFAD-funded project. One day, Sana and Dalel approached Tahar to present their mozzarella. He promised to buy it on the sole condition that it was as good as that produced in Italy. ‘They passed the test,’ says Tahar. Since then, he has been a loyal customer of Sana and Dalel. |
