The “Cacao de la Sierra” (Cacao from the Sierra) tourist route was designed by Johny Serrano (22 years old) and Camilo Chinchilla (29 years old) as their final project in the “Touristic experiences and circuits design” course, offered by the “Anfitriones para la Paz” (Hosts for Peace) initiative and part of the “Puentes/Rural for Young People” project, developed by ICCO Cooperation with IFAD’s financial and technical support.

The tour, which takes place within the estate in which Johny’s family has grown cacao for over 18 years, shows tourists the steps necessary before a cacao bean can turn into chocolate. “Cacao fruits are gathered, opened, the pulp removed and the beans taken out, and then they are put in wooden boxes so they can ferment”, Johny explains. Cacao ferments for about 8 to 9 days, in crates which hold between 200 and 300 kilos of beans. “The center of these boxers reaches temperatures between 50 °C and 60 °C, so the beans have to be stirred so they ferment equally. This has an effect on the quality of cacao: the taste, aroma, and texture”.

After fermentation, the beans are sun-dried for 9 days. Now they are ready to be sold to producers who take these beans and turn them into chocolate liquor and, later, chocolate.

Through tourism, Johny seeks to diversify his family’s income, and give new value to the cacao plantation with which they work. “We looked for an alternative to benefit from this product”, Johny says.
