Title: Colombia - Puentes/Rural for Young People – November 2023
Description: “Arroz silvestre” (wild rice), a dish with typical flavors from the Magdalena such as ñame (yam), “queso costeño” (a cheese from Colombia’s Caribbean coast), coconut, iraca (toquilla palm), and cacao. “Anfitriones para la Paz” (Hosts for Peace) initiative created a cookbook “¡A qué sabe Santa Marta!” (“Santa Marta’s taste”)

The dish prepared by Leidys Odor, a former student of the “Magdalena’s regional cuisine” course, offered by the “Anfitriones para la Paz” initiative. Leydis lived several years in Bogotá as a result of forced displacement. While she was there, one of the things she missed the most was the flavours from their region: “like malanga (also known as taro), which you don’t see in other places, or name (yam) and sweet potato”. That was one of the reasons why she took the course when she had the chance: “I was interested because it was a course rescuing Magdalena’s food, something lost so many years ago”.

On the other hand, there’s Johny Serrano, the maker of the “Cacao de la Sierra” (Cacao from the Sierra) tourist route and former student of the “Touristic experiences and circuits design” course, who thinks his home region is bursting with gastronomic potential. “We have so many fruits, tubers, vegetables we should be taking advantage of”, says the 22-year-old entrepreneur. “Sometimes, for lack of innovation or knowledge, we don’t do it. But we do have great food: during the course I tasted dishes never in my life I would have guessed you could prepare out of sweet potato, or out of malanga. You can make some excellent dishes to offer visitors, typical food from the region”.

The “Anfitriones para la Paz” initiative is part of the “Puentes/Rural for Young People” project, developed by ICCO Cooperation in partnership with IFAD. This initiative bets on food and tourism as part of the financial growth of rural communities in Colombia
