Description: Leidys Odor is a former student of “Magdalena’s regional cuisine” course.

Ever since she was little, Leidys has been passionate about cooking. Her grandmother taught her from the region’s traditional recipes, to how to work and temperate chocolate. “My grandmother was an expert cook who devoted herself to helping the community”, she says.

Leidys is a victim of Colombia’s armed conflict, displaced from her home in 2010. She studied gastronomy in Bogotá, as well as setting up a small business of “fritos costeños” (fried food from Colombia’s Caribbean coast) with which she shared the flavours of her homeland. After several years she was able to return to the region, and it was then when she learnt about the courses offered by the “Anfitriones para la Paz” initiative, part of the “Puentes/Rural for Young People” project, developed by ICCO Cooperation with IFAD’s financial and technical support. “I was interested because it was a course rescuing Magdalena’s food, something lost so many years ago”, Leidys says, adding she also convinced over 20 young adults to enrol in these technical trainings.

Now Leidys is part of the small business “Mujer Tayrona” (Tayrona woman), a group of five women who specialize in transforming cacao from the Sierra Nevada in different products, from cacao nibs to chocolate bars. This group works alongside Johny Serrano’s business, “Cacao de la Sierra” (Cacao from the Sierra) tourist route, creating a business in which agriculture, sustainable tourism and cacao-based products are linked.
