Description: Agustina Choque is the legal representative of the Association of Agro-livestock Producers of Turco (APAT). At 56 years old, she, like many other female producers, plays an active role in APAT's llama meat processing plant. Proudly, she recounts how, in the current location, they built an entire plant from scratch to transform food. "This plant you are seeing now was just a tholar (a site full of bushes), just firewood, there was nothing. It was firewood lots that we, mostly women, worked on." Turco municipality is in the department of Oruro, Bolivia, known for its focus on camelid production, particularly the breeding and commercialization of llamas, alpacas, and related products. Agustina and the other female producers face a significant challenge: reintegrating their products into the subsidy provided by the national government, primarily because they are aware that they have the necessary raw materials. They are confident that they could easily rejoin the subsidy since they have the capacity and resources. Recognizing the need for employment in the local population, they request the government's inclusion in the program once again. Furthermore, they seek greater recognition for llama meat, which, despite being appreciated, they believe could receive even more acknowledgment.


In Agustina's experience, the versatility of the product is acknowledged, particularly in the production of breakfast mortadella and salami. She highlights the variety of options, such as liver paste, that can be crafted, mentioning the possibility of creating around 30 products. Although they have experimented with producing these items, the process is still in development. Agustina emphasizes the importance of the market, indicating that the improvement of the products is contingent on demand. She underscores that, currently, the lack of a market is the primary challenge in expanding and refining their product line.
