The work of cutting llama meat requires particular skills. The members of the Asociación de Productores Agroganaderos de Turco (APAT), who work in the meat processing plant, are very experienced on this. Depending on the type of product, they know what type of cut they will make, which are the most profitable elements and which can be left out, such as fats. Agustina Choque and Roberta Rivera show how they work daily in this plant located in the municipality of Turco, in western Bolivia. All the products that come out of this place, sausages, dried and dehydrated meat called charque and others such as mortadella, go to different parts of the country and are the mainstay of the local economy. Over time, the challenge of finding a market for llama meat has been significant. When Agustina was a child, smuggling llama meat was common, but not highly valued. Today, however, at 56 years old, llama meat has gained recognition and is adequately priced in the market. In addition, they are now exploring new ways of transforming the meat, such as sausage production, to diversify and expand their products. With the support of the Pro-Camelids program, financed by IFAD, APAT members were able to improve the quality of their work equipment. "We have recently implemented the equipment. They are a refrigerator, a meat grinder, a sausage filler and grinder for charcoal, and a slicer for crispy charcoal," Choque says. |
